A sicilian recipe: DESPERATE SPAGHETTI

Ingredients for 4 people: 600 gr. spaghetti, 500 gr. peeled tomatoes, 2 onions, 25 gr. black olives, 25 gr. capers, 25 gr. mushrooms, 3 anchovies, olive oil, marjoram, pepper & salt.

Fry the chopped onion in a large saucepan with some olive oil. After a few minutes add the peeled tomatoes and cook until it evaporates. Meanwhile mince olives, capers, mushrooms and anchovies. Pour the compound in the saucepan adding a few tablespoon of water. Flavour gently all together for a few minutes, adjusting with salt and pepper, then take the pan off the fire.
Boil the spaghetti in plenty of salted boiling water. When ready, pour the drained spaghetti in the pan and stir with the sauce just for a while on a very slow fire. Ready to serve. Enjoy your italian meal!

    This is what I love about Italian cooking. All you need is some noodles, sauce, and then whatever other ingredients or seasonings that sound good to you. I’m definitely desperate for that spaghetti right now ;)
